Healthy Baked Potato Soup

Happy hump day! (<—Remember when you were 12 and that was the most hilarious thing of all time? Or was that just awkward middle school me?)

I have to admit, today has been a very off day from the get-go. I spent the whole night dreaming about not being able to so to sleep, so I woke up all kinds of confused. My brain was telling me that I hadn’t slept, while my body was awake. Talk about confusing!

From there my whole day was just kind of bizarre. We had a brunch meeting at a local restaurant this morning, meaning that I basically ate lunch at 10am. Then I spent the rest of the day chasing people down on the phone, and before I knew it, it was the end of the day.

Apparently even Laney is having a weird day. For some reason she jumped up on the couch and plopped down in the world’s most awkward looking position. And then just started at me miserably.

Sadly I wasn’t able to make it to the gym today – Chris and I had some shopping to do for an Angel Tree child we picked off the tree from church last week. So I decided to introduce Chris to the wonderful world of Marshalls. Which then turned into $75 worth of shopping for multiple Christmas presents. I love Marshalls (and Ross and TJMaxx…)!

What I Ate Wednesday

But it is Wednesday, and you know what that means: What I Ate Wednesday!

For those of you who aren’t familiar, please check out creator Jenn’s explanation. She explains it much more eloquently than I ever could.

This month Jenn challenged us to make some Healthy Holiday Recipes. And boy do I have a good one for you today!

But first, let’s review today’s eats, shall we?

Breakfast

Since I knew I was going to have a brunch meeting, I went with something simple for breakfast. Life cereal, almond milk, and frozen berries. Plus the (very) necessary cup of tea.

Brunch

We went to Country Cookin’ for brunch… which you can probably guess does not have the healthiest of options. I did manage to bypass the very decadent looking cinnamon rolls and chipped beef gravy, and went for a few other mildly healthier options (emphasis on mildly). Although I am noticing now the amount of potatoes on my plate!

Then I doused most of it with ketchup. Yup, I’m that person.

Dinner

For dinner I made one of the first recipes that started this blog. In fact, the original picture is actually part of my header, even though the recipe itself never actually made it on the blog. Healthy Baked Potato soup with turkey bacon!

Dessert

Dessert was a slice of pumpkin roll from Chris’ mom. Definitely devoured it before taking a pictures. My bad.

So there you have it, What I ate today!

But as an extra bonus, how about a recipe?

 

Healthy Baked Potato Soup

(Slightly adapted from Skinnytaste)

Ingredients

  • 2 russet potatoes, washed and dried
  • 1 small head of cauliflower, cut into florets
  • 1 1/2 cups fat free chicken broth
  • 1 1/2 cups 1% reduced-fat milk (I used skim)
  • salt and freshly cracked black pepper
  • 1/2 cup plain greek yogurt
  • 1/2 cup reduced-fat shredded sharp cheddar cheese
  • Chopped chives
  • 3-5 slices turkey bacon, cooked and crumbled

Directions
1. Pierce potatoes with a fork; microwave on high for 5 minutes, flip and microwave another 3 – 5 minutes, until tender. Cool and peel potato. Chop into small pieces.

2. Meanwhile, steam cauliflower with water in a large covered pot until tender. Drain and return to pot.

3. On medium heat, add chicken broth, milk, potatoes and bring to a boil. Use immersion blender to puree until smooth. Add greek yogurt, half the chives, salt and pepper, cheese and cook on low another 5-10 minutes, stirring occasionally.

4. Remove from heat.  Top each serving with turkey bacon, chives and additional cheese (especially if you are like me and love cheese).

I have to admit, soups of any variety are definitely my favorites. Just so warm and filling in the winter!
